Elizabethan Desserts: A Revisit... Finally.




D. and I are trying harder to get our Christmas shopping act together. We've done the last-minute bit a few times and we never really had a problem, but we just don't want to deal with the stress of scurrying from one crowded mall to another trying to make sure we have our bases covered. This year, we started with a run to the outlet mall in Carlsbad. Of course, that includes a stop at Elizabethan Desserts in Encinitas.


I haven't been since my original post on the bakery. Geez, that's nearly three years ago. Since then, I've learned what true red velvet is, with Elizabeth's cupcake being my introduction to good red velvet cake... and no, contrary to what I wrote in that first post, it should not be a mild chocolate cake.

Buttermilk. A good red velvet has the amazing texture and flavor that only comes from a buttermilk-based batter. Sure, there's typically a hint of chocolate, but it's that texture and tang that sets it aside from a meek chocolate cake. I've had a lot more red velvet cakes and cupcakes in the intervening years, made a few of my own, and Elizabethan Desserts has set the bar really high.

It's probably best that the bakery is too far for me to visit regularly. The baked goods are as gorgeous as the signage.


There's a sugar cookie decorated with fresh buttercream as a turkey, a red velvet cupcake, a small apple crumble pie, a coffee-chocolate cupcake called Mr. Bean's Cup-O-Joe, and Colin's Peanut Butter Wag (chocolate-dipped peanut-butter-frosted chocolate cupcake).

It was all amazing.

Go there. Just go. And don't take years to return.

I've been hearing about this place for so long and have yet to try it out for myself. But seeing the delicious photos confirms that I need to make a visit to this place a priority! I love a good red velvet cupcake too!

I haven't been here in such a long time! I like their made to order cakes more than the stuff in the counter.

I've been meaning to go here for years, I don't usually go up towards Encinitas but I really have to - the photos of the baked goods look super tasty!
